These easy sweet potato taco bowls feature roasted spiced sweet potatoes, black beans, fresh veggies, and creamy toppings over rice or quinoa. A colorful, healthy dinner ready in 30 minutes.

Ingredients

2 large sweet potatoes, peeled and cubed
2 tbsp olive oil
2 tsp taco seasoning
2 cups cooked rice or quinoa
1 can black beans, drained and rinsed
1 cup cherry tomatoes, halved
1 cup corn (fresh, canned, or frozen)
¼ cup red onion, diced
1 avocado, sliced
¼ cup fresh cilantro, chopped
Lime wedges, for serving
Optional: ¼ cup sour cream + juice of ½ lime for crema

Instructions
