2 pounds boneless, skinless chicken thighs or breasts
1/2 cup honey
1/3 cup soy sauce (low-sodium preferred)
4 cloves garlic, minced
1/4 cup ketchup
2 tablespoons rice vinegar or apple cider vinegar
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional)
1 tablespoon cornstarch
2 tablespoons cold water (for slurry)
1 cup broccoli florets (optional)
1 red bell pepper, sliced (optional)
Cooked white or brown rice, for serving
2 tablespoons sesame seeds, for garnish
2 green onions, sliced, for garnish
Pat chicken dry and season with black pepper; place in slow cooker.
Whisk honey, soy sauce, ketchup, garlic, vinegar, and red pepper flakes; pour over chicken.
Cook on low 4–5 hours or high 2–3 hours.
Add vegetables 30 minutes before end if using.
Mix cornstarch with cold water; stir into sauce, cook 5–10 minutes until thickened. Pour over chicken.
Garnish with sesame seeds and green onions; serve over rice.
