2 pounds beef sirloin or tenderloin, cut into 1-inch cubes
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup beef broth
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes (optional)
1 tablespoon cornstarch
2 tablespoons cold water (for slurry)
1/2 cup sliced bell peppers (optional)
1/2 cup sliced onions (optional)
2 tablespoons chopped fresh parsley, for garnish
Cooked rice, mashed potatoes, or roasted vegetables, for serving
Pat beef dry and season with salt, pepper, and paprika.
Mix garlic, melted butter, beef broth, Worcestershire sauce, Dijon mustard, and red pepper flakes.
Place beef in slow cooker and pour sauce over. Add vegetables if using.
Cook on low 4–5 hours or high 2–3 hours.
Mix cornstarch with cold water and stir in 15 minutes before serving to thicken.
Garnish with parsley and serve over preferred sides.
