1½ pounds boneless skinless chicken thighs
½ cup soy sauce
¼ cup brown sugar
2 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 tablespoon cornstarch
2 tablespoons water
Wooden or metal skewers
Sliced green onions and sesame seeds for garnish, optional
Whisk soy sauce, brown sugar, garlic, ginger, rice vinegar, and sesame oil.
Marinate chicken in half of the mixture for at least 30 minutes.
Thread chicken onto soaked skewers.
Grill over medium heat 10 to 12 minutes, turning frequently.
Simmer reserved marinade and thicken with cornstarch slurry.
Brush thickened glaze onto chicken during final minute of grilling.
Rest briefly, garnish, and serve.
Use reduced-sodium soy sauce if preferred.
Soak wooden skewers before grilling.
