6 slices thick-cut bacon chopped
1 medium onion diced
2 cloves garlic minced
2 medium potatoes diced
1 carrot diced optional
4 cups chicken broth
3 cups green cabbage sliced
2 sprigs fresh thyme
Black pepper to taste
Salt to taste
2 tablespoons chopped parsley optional
Cook bacon in a large pot over medium heat until lightly crisp.
Remove some bacon for garnish, leaving drippings in pot.
Sauté onion for 4 minutes, then add garlic and cook briefly.
Add potatoes and carrots, stirring to coat.
Pour in broth and bring to a gentle simmer.
