Tuscan-Style Chicken Soup is a hearty, comforting soup with chicken, vegetables, and flavorful herbs. It’s perfect for chilly nights or when you need a cozy, nourishing meal.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs

  • 1 onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 6 cups chicken broth

  • 1 can diced tomatoes (14.5 oz)

  • 1 tbsp fresh thyme

  • 1 tbsp fresh rosemary

  • 2 bay leaves

  • 4 cups spinach or kale

  • Olive oil for sautéing

  • Salt and pepper, to taste

  • Parmesan cheese for garnish (optional)

Instructions

  • Sauté onions, carrots, celery, and garlic in olive oil until soft.

  • Add chicken to the pot, searing on both sides.

  • Pour in broth and tomatoes, and add herbs and bay leaves. Simmer for 20-25 minutes.

  • Shred the chicken and return it to the soup.

  • Add spinach and cook for another 5 minutes.

  • Adjust seasoning and serve with grated Parmesan.

Notes

  • This soup can be made ahead and stored in the fridge for up to 4 days.

  • Freeze for up to 3 months for later use.
