Tuscan-Style Chicken Soup is a hearty, comforting soup with chicken, vegetables, and flavorful herbs. It’s perfect for chilly nights or when you need a cozy, nourishing meal.
4 boneless, skinless chicken breasts or thighs
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
6 cups chicken broth
1 can diced tomatoes (14.5 oz)
1 tbsp fresh thyme
1 tbsp fresh rosemary
2 bay leaves
4 cups spinach or kale
Olive oil for sautéing
Salt and pepper, to taste
Parmesan cheese for garnish (optional)
Sauté onions, carrots, celery, and garlic in olive oil until soft.
Add chicken to the pot, searing on both sides.
Pour in broth and tomatoes, and add herbs and bay leaves. Simmer for 20-25 minutes.
Shred the chicken and return it to the soup.
Add spinach and cook for another 5 minutes.
Adjust seasoning and serve with grated Parmesan.
This soup can be made ahead and stored in the fridge for up to 4 days.
Freeze for up to 3 months for later use.
