Ingredients

¼ cup shredded cheddar or mozzarella cheese
1 teaspoon olive oil or butter

For the Salad:
2 cups mixed greens or baby spinach
½ cup cherry tomatoes halved
½ cucumber sliced
2 tablespoons thinly sliced red onion
1 tablespoon olive oil
1 tablespoon fresh lemon juice

Instructions

  • Wash and dry salad greens and vegetables.

  • Whisk olive oil, lemon juice, salt, and pepper for the dressing and toss with salad ingredients.

  • Crack eggs into a bowl, whisk well, and season lightly.

  • Heat olive oil or butter in a nonstick skillet over medium-low heat.

  • Pour in eggs and cook gently, pushing edges inward as they set.

  • Sprinkle cheese over one half when eggs are nearly set.

  • Fold omelette in half and cook until cheese melts.
