This refreshing Watermelon + Cucumber + Feta Salad is the perfect light side dish for summer. It’s easy to make, hydrating, and packed with vibrant flavors.

Ingredients

  • 4 cups watermelon, diced

  • 1 large cucumber, diced

  • ½ cup crumbled feta cheese

  • ¼ cup fresh mint, chopped

  • 1 tbsp olive oil (optional)

  • Juice of 1 lime

  • Salt and pepper to taste

Instructions

  • Dice the watermelon and cucumber, and chop the mint.

  • In a large bowl, combine watermelon, cucumber, feta, and mint.

  • Drizzle with lime juice and olive oil (if using). Toss gently.

  • Season with salt and pepper, and serve immediately.

Notes

For a heartier meal, add grilled chicken or quinoa. Best served fresh, but can be stored in the fridge for 1–2 days.
