This refreshing Watermelon + Cucumber + Feta Salad is the perfect light side dish for summer. It’s easy to make, hydrating, and packed with vibrant flavors.
4 cups watermelon, diced
1 large cucumber, diced
½ cup crumbled feta cheese
¼ cup fresh mint, chopped
1 tbsp olive oil (optional)
Juice of 1 lime
Salt and pepper to taste
Dice the watermelon and cucumber, and chop the mint.
In a large bowl, combine watermelon, cucumber, feta, and mint.
Drizzle with lime juice and olive oil (if using). Toss gently.
Season with salt and pepper, and serve immediately.
For a heartier meal, add grilled chicken or quinoa. Best served fresh, but can be stored in the fridge for 1–2 days.
