Creamy Italian sausage gnocchi soup is a rich, one-pot meal filled with tender gnocchi, savory sausage, fresh vegetables, and a silky cream broth — the ultimate comfort food in a bowl.
1 tbsp olive oil
1 lb Italian sausage
1 small onion, diced
2 celery stalks, diced
2 carrots, diced
3 garlic cloves, minced
1 tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes (optional)
4 cups chicken broth
1 (16 oz) package potato gnocchi
1 cup heavy cream
2–3 cups fresh spinach or kale
½ cup grated Parmesan
Heat oil in a large pot. Brown sausage and break into crumbles.
Add onion, celery, carrot, and garlic. Sauté until soft.
Stir in seasoning, salt, pepper, and broth. Simmer 7–10 minutes.
Add gnocchi and cook until they float (3–4 minutes).
Reduce heat and stir in cream and greens. Simmer 2 minutes.
Stir in Parmesan. Adjust seasoning. Serve hot with bread.
To make ahead, cook sausage and base, but add gnocchi and cream fresh when reheating. Store up to 4 days in the fridge.
