Cilantro Lime Pasta Salad combines tender pasta, crisp vegetables, fresh cilantro, and a bright lime dressing for a refreshing and colorful dish.
12 ounces rotini or bowtie pasta
1 cup cherry tomatoes, halved
1 cup diced cucumber
1/2 cup diced red bell pepper
1/4 cup finely chopped red onion
1/2 cup corn kernels
1 cup black beans, rinsed and drained
1/3 cup chopped fresh cilantro
1/4 cup olive oil
3 tablespoons fresh lime juice
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Cook pasta in salted boiling water according to package directions.
Drain and rinse briefly under cool water.
Transfer pasta to a large mixing bowl.
Add tomatoes, cucumber, bell pepper, red onion, corn, and black beans.
In a small bowl whisk olive oil, lime juice, garlic, salt, and pepper.
Pour dressing over pasta mixture and toss gently.
Add chopped cilantro and mix lightly.
Refrigerate for about 30 minutes before serving.
Stir again and adjust seasoning if needed.
Add diced avocado just before serving for extra creaminess.
