Cilantro Lime Pasta Salad combines tender pasta, crisp vegetables, fresh cilantro, and a bright lime dressing for a refreshing and colorful dish.

Ingredients

12 ounces rotini or bowtie pasta
1 cup cherry tomatoes, halved
1 cup diced cucumber
1/2 cup diced red bell pepper
1/4 cup finely chopped red onion
1/2 cup corn kernels
1 cup black beans, rinsed and drained
1/3 cup chopped fresh cilantro
1/4 cup olive oil
3 tablespoons fresh lime juice
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Cook pasta in salted boiling water according to package directions.

  • Drain and rinse briefly under cool water.

  • Transfer pasta to a large mixing bowl.

  • Add tomatoes, cucumber, bell pepper, red onion, corn, and black beans.

  • In a small bowl whisk olive oil, lime juice, garlic, salt, and pepper.

  • Pour dressing over pasta mixture and toss gently.

  • Add chopped cilantro and mix lightly.

  • Refrigerate for about 30 minutes before serving.

  • Stir again and adjust seasoning if needed.

Notes

Add diced avocado just before serving for extra creaminess.
A pinch of chili flakes can add gentle heat if desired.
