Ingredients

3 ripe bananas, mashed
1 cup grated carrots (about 2 medium carrots)
2 large eggs
1/3 cup vegetable oil or melted coconut oil
1/2 cup brown sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger (optional)
1/2 cup chopped walnuts or pecans (optional)
1/4 cup raisins (optional)

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • Mash bananas, then mix in grated carrots, eggs, oil, brown sugar, and vanilla.
  • Whisk together flour, baking soda, baking powder, salt, and spices; fold into wet ingredients.
  • Fold in optional nuts or raisins.
  • Pour into pan and bake 50–60 minutes, checking doneness with a toothpick.
  • Cool in pan 10 minutes, then transfer to wire rack to cool completely before slicing.
