Light and refreshing cucumber and mozzarella salad with fresh herbs, olive oil, and balsamic or lemon juice.
2 cups cucumber, thinly sliced
8 ounces fresh mozzarella, sliced or in mini balls
1/4 cup cherry tomatoes, halved (optional)
2 tablespoons fresh basil or parsley, chopped
1–2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar or fresh lemon juice
Salt and freshly cracked black pepper, to taste
Slice cucumbers thinly and halve cherry tomatoes.
Slice mozzarella or use mini mozzarella balls.
Combine cucumbers, mozzarella, tomatoes, and herbs in a large bowl.
Drizzle with olive oil and balsamic vinegar or lemon juice.
Toss gently to coat all ingredients.
Season with salt and freshly cracked black pepper.
Serve immediately or chill for 10–15 minutes.
Substitute mozzarella with feta or burrata. Add vegetables or serve as skewers for variation.
