Cucumber Mozzarella Salad with Basil and Olive Oil

Light and refreshing cucumber and mozzarella salad with fresh herbs, olive oil, and balsamic or lemon juice.

Ingredients

2 cups cucumber, thinly sliced
8 ounces fresh mozzarella, sliced or in mini balls
1/4 cup cherry tomatoes, halved (optional)
2 tablespoons fresh basil or parsley, chopped
1–2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar or fresh lemon juice
Salt and freshly cracked black pepper, to taste

Instructions

  • Slice cucumbers thinly and halve cherry tomatoes.

  • Slice mozzarella or use mini mozzarella balls.

  • Combine cucumbers, mozzarella, tomatoes, and herbs in a large bowl.

  • Drizzle with olive oil and balsamic vinegar or lemon juice.

  • Toss gently to coat all ingredients.

  • Season with salt and freshly cracked black pepper.

  • Serve immediately or chill for 10–15 minutes.

Notes

Substitute mozzarella with feta or burrata. Add vegetables or serve as skewers for variation.
