2 large eggs

1/2 cup buttermilk
1 cup fresh strawberries, chopped
1/4 cup strawberry puree (optional)
1/2 cup powdered sugar
4 ounces cream cheese, softened
1 teaspoon vanilla extract
2 tablespoons heavy cream
Fresh strawberry slices, for decoration

Instructions

  • Preheat oven to 350°F (175°C) and prepare an 8-inch round cake pan.
  • Whisk flour, baking powder, baking soda, and salt in a bowl.
  • Cream butter and sugar until light and fluffy.
  • Beat in eggs one at a time, then add vanilla extract.
  • Alternate adding dry ingredients and buttermilk, mixing gently.
  • Fold in chopped strawberries and optional puree.
  • Pour batter into pan and bake 35–40 minutes until a toothpick comes out clean.
  • Cool cake 10 minutes in pan, then transfer to wire rack.
  • Beat cream cheese, powdered sugar, vanilla, and cream until fluffy for frosting.
  • Frost cake and decorate with fresh strawberry slices in a whimsical pattern.
  • Chill for 30 minutes before slicing.
