A classic strawberry pie with a tender crust, juicy strawberries, and a glossy fruit glaze, perfect for summer and special occasions.

Ingredients

1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cubed
2–3 tablespoons ice water
1 1/2 pounds fresh strawberries, hulled and sliced
3/4 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 cup apricot or strawberry preserves, warmed
Optional garnish: whipped cream, mint leaves, or chocolate shavings

Instructions

  • Combine flour and salt, cut in butter until coarse crumbs form, add ice water, chill 30 minutes.
  • Roll dough, fit into 9-inch pan, blind bake at 375°F (190°C) for 15 minutes with weights, then 10–12 minutes without, cool.
  • Toss strawberries with sugar, cornstarch, lemon juice, and vanilla, let sit 10 minutes.
  • Spread filling into crust.
  • Brush with warmed preserves.
  • Refrigerate 1–2 hours.
  • Garnish and serve.
