Quick, gluten-free breakfast bars packed with oats, nuts, seeds, and dried fruits for a nutritious start to your day

Ingredients

1 1/2 cups gluten-free rolled oats
1 cup almond flour
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/2 cup chopped almonds or walnuts
1/2 cup dried cranberries or raisins
1/4 teaspoon salt
1 teaspoon cinnamon
1/3 cup honey or maple syrup
1/4 cup almond butter or peanut butter
1 teaspoon vanilla extract
Optional: 1/4 cup dark chocolate chips

Instructions

  • Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  • Mix oats, almond flour, seeds, nuts, dried fruit, salt, and cinnamon.
  • Warm honey and almond butter until smooth; stir in vanilla. Mix with dry ingredients.
  • Press mixture firmly into pan, about 1 inch thick.
  • Bake 20–25 minutes until edges are golden and center set. Cool completely.
  • Lift from pan and slice into 10–12 bars. Store airtight.
