Gluten-free spinach and feta pinwheels with tender, flaky dough, perfect for breakfast, brunch, or snacks.

Ingredients

1 sheet gluten-free puff pastry or 1 batch homemade gluten-free dough
2 cups fresh spinach, chopped
1/2 cup feta cheese, crumbled
1 small garlic clove, minced
1 tablespoon olive oil
1/4 teaspoon black pepper
Pinch of salt
1 teaspoon dried oregano or fresh herbs (optional)
1 egg, beaten for egg wash

Instructions

  • Preheat oven to 375°F (190°C). Grease a baking sheet or line with parchment paper.
  • Sauté garlic in olive oil, add spinach until wilted. Mix in feta, pepper, salt, and herbs.
  • Roll out dough, spread filling evenly, leaving edges. Roll dough into a log and seal edges.
  • Slice log into 1-inch pinwheels, place on baking sheet, brush with egg wash.
  • Bake 18–22 minutes until golden. Cool slightly before serving.

Notes

Add sun-dried tomatoes, roasted peppers, or herbs for variation. Can freeze before baking.
