A hearty pasta salad combining tender grilled chicken, crisp romaine, and creamy Caesar dressing for a refreshing, protein-packed meal.

Ingredients

2 cups cooked fusilli or penne pasta
2 cups romaine lettuce, chopped
2 grilled chicken breasts, sliced
1/2 cup Caesar dressing
1/4 cup grated Parmesan cheese
1/2 cup croutons
1 tablespoon olive oil
1 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/2 cup cherry tomatoes, halved

Instructions

  • Cook pasta until al dente, drain, rinse under cold water, and toss with olive oil.
  • Grill or pan-sear chicken, then slice.
  • Chop romaine lettuce and halve cherry tomatoes if using.
  • Combine pasta, lettuce, and chicken in a large bowl. Add Caesar dressing gradually.
  • Sprinkle Parmesan and toss gently. Adjust seasoning as needed.
  • Add croutons just before serving.
  • Serve immediately or refrigerate up to 2 hours before serving.

Notes

Use short pasta to hold dressing. Add croutons last to maintain crunch. Adjust dressing to taste.
