Spicy Spiral Cucumber Salad is a refreshing, crisp, and fiery dish with vibrant spirals of cucumber coated in a zesty, tangy, and slightly sweet dressing, perfect for hot days or as a lively side.

Ingredients

2 large English cucumbers
1 tablespoon red chili flakes (adjust to taste)
3 tablespoons rice vinegar
1 tablespoon lime juice
2 teaspoons honey or agave syrup
1 tablespoon soy sauce or tamari
2 garlic cloves, minced
1 teaspoon fresh ginger, grated
2 scallions, thinly sliced
2 tablespoons fresh cilantro, chopped
1 tablespoon toasted sesame oil
1 tablespoon sesame seeds
Optional: 1 tablespoon crushed peanuts for garnish
Salt to taste

Instructions

  • Wash and trim cucumbers, then spiralize or thinly slice.
  • Sprinkle cucumbers with salt, let sit 10 minutes, then pat dry.
  • In a bowl, whisk together rice vinegar, lime juice, honey, soy sauce, garlic, ginger, and chili flakes.
  • Add sesame oil and mix until smooth.
  • Toss cucumbers with dressing, add scallions and cilantro, and sprinkle sesame seeds on top.
  • Garnish with crushed peanuts if desired. Serve immediately or chill for 15–30 minutes.

Notes

Adjust spice, sweetness, and acidity to taste. For vegan option, use agave syrup and tamari. Add other vegetables or proteins as desired.
