A crisp, naturally sweet carrot and apple salad with lemon-honey dressing, nuts, and herbs, perfect as a side or snack.

Ingredients

2 cups shredded carrots
2 medium apples, cored and thinly sliced
2 tablespoons lemon juice
1 tablespoon honey or maple syrup
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/4 cup chopped walnuts or almonds
Optional: 2 tablespoons raisins or dried cranberries
Optional: 2 tablespoons chopped fresh parsley or mint

Instructions

  • Shred carrots and thinly slice apples. Toss apples with lemon juice to prevent browning.
  • Whisk honey/maple syrup, olive oil, salt, and pepper. Pour over carrot-apple mixture and toss gently.
  • Fold in nuts, dried fruit, and herbs if using. Chill 10–15 minutes before serving.

Notes

Add cinnamon or citrus zest for extra flavor. Store in fridge up to 2 days.
