A warm grilled cheese sandwich layered with basil pesto and melted cheese on crispy toasted bread.

Ingredients

4 slices sourdough bread
1/3 cup basil pesto
4 slices mozzarella
2 slices provolone
2 tablespoons butter
1 tomato, optional
1/4 cup spinach, optional
1/4 teaspoon black pepper

Instructions

  • Butter outside of bread slices.
  • Place bread in skillet over medium heat.
  • Spread pesto inside slices.
  • Add cheese and optional vegetables.
  • Close sandwich with bread.
  • Cook until golden on both sides.
  • Rest briefly before slicing.
  • Serve warm.

Notes

Cook over medium heat for even melting and crisp texture.
