Roasted Sweet Potato & Spinach Bake with Nutritional Yeast

A wholesome bake with sweet potatoes, spinach, eggs, and cheese, perfect for a healthy breakfast, brunch, or side dish.

Ingredients

2 medium sweet potatoes, peeled and diced
2 cups fresh spinach, chopped
4 large eggs
1/2 cup milk
1/2 cup shredded cheddar or feta cheese
1/4 cup diced onion
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon dried thyme
Optional: 1/2 cup cooked chicken or turkey, diced
Fresh parsley for garnish

Instructions

  • Preheat oven to 400°F (200°C) and grease an 8×8-inch baking dish.
  • Toss sweet potatoes with olive oil, salt, pepper, paprika, and thyme; roast 20–25 minutes until tender.
  • Sauté onion and garlic, add spinach until wilted.
  • Whisk eggs and milk, then fold in roasted sweet potatoes, greens, cheese, and optional meat.
  • Transfer to baking dish and bake at 375°F (190°C) for 25–30 minutes until set and golden.
  • Cool 5–10 minutes before serving; garnish with parsley.
