2 pounds boneless, skinless chicken thighs
1 1/2 cups long grain white rice
4 cups chicken broth, low sodium
3 tablespoons olive oil
1 medium onion, diced
4 garlic cloves, minced
1 lemon, juice and zest
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon dried parsley
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped

Instructions

  • Place chicken, onion, and garlic into slow cooker.
  • Add broth, lemon juice, zest, and seasonings.
  • Cook until chicken becomes tender.
  • Shred chicken and return to cooker.
  • Add rice and stir into liquid.
  • Cook until rice becomes tender.
  • Mix and finish with fresh parsley.

Notes
