1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
16 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup heavy cream or sour cream
1 tablespoon lemon juice
1 pound fresh strawberries, hulled and sliced
2 tablespoons granulated sugar
2 tablespoons apricot or strawberry preserves, warmed
Optional garnish: whipped cream, chocolate shavings, mint leaves

Instructions

  • Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter; press into 9-inch pie pan. Bake 8–10 minutes and cool.
  • Beat cream cheese until smooth, add sugar, vanilla, lemon juice, and heavy cream or sour cream. Spread evenly over cooled crust.
  • Toss strawberries with sugar, let sit 10 minutes, brush with warmed preserves for glaze.
  • Arrange strawberries on top of filling.
  • Refrigerate 2–3 hours.
  • Slice and serve with optional garnish.
