2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
8 ounces cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
4 cups fresh strawberries, sliced
1/2 cup granulated sugar
2 tablespoons cornstarch
1/2 cup water
1 tablespoon lemon juice

Instructions

  • Mix graham cracker crumbs, melted butter, and sugar, then press into a pie dish.
  • Chill crust for 30 minutes.
  • Beat cream cheese until smooth, then mix in powdered sugar and vanilla.
  • Whip cream and fold into cream cheese mixture.
  • Spread filling into crust and chill.
  • Cook sugar, cornstarch, and water until thickened, then add lemon juice.
  • Fold strawberries into glaze and cool slightly.
  • Spread strawberry topping over filling.
  • Chill for at least 4 hours before serving.
