A creamy and refreshing pasta salad inspired by street corn, made with charred corn, tangy lime, and a lighter yogurt-based dressing.

Ingredients

8 ounces rotini or penne pasta
2 cups corn kernels
1/2 cup plain Greek yogurt
1/4 cup mayonnaise
2 tablespoons lime juice
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup crumbled cotija cheese
1/4 cup chopped cilantro
1/4 cup diced red onion
1 small jalapeño, diced (optional)
1 tablespoon olive oil

Instructions

  • Cook pasta until al dente, then cool.
  • Sauté corn in olive oil until lightly charred.
  • Mix yogurt, mayonnaise, lime juice, and seasonings.
  • Combine pasta, corn, onion, jalapeño, and cilantro.
  • Add dressing and mix well.
  • Fold in cheese and adjust seasoning.
  • Chill for 30 minutes before serving.
