Valentine’s Strawberry Pie with Glossy Berries and Flaky Crust

A festive Valentine’s Day dessert with fresh strawberries, a tender crust, and a glossy fruit glaze.

Ingredients

1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cubed
2–3 tablespoons ice water
1 teaspoon vanilla extract
1 1/2 pounds fresh strawberries, hulled and sliced
1/2 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 cup strawberry or apricot preserves, warmed
Optional garnish: whipped cream, mint leaves, or edible hearts

Instructions

  • Combine flour and salt, cut in butter until coarse crumbs form, add vanilla and ice water, chill 30 minutes.
  • Roll out dough, fit into 9-inch pie pan, blind bake at 375°F (190°C) for 15 minutes with weights, then 10–12 minutes without, cool.
  • Toss strawberries with sugar, cornstarch, lemon juice, and vanilla, let sit 10 minutes.
  • Pour filling into cooled crust.
  • Brush top with warmed preserves.
  • Chill at least 1 hour.
  • Garnish with whipped cream, mint, or hearts.

Notes

Add cream cheese layer for richness, optional fruit variations, or gluten-free/vegan crust substitutions.
